The main staple dish in the Philippines is Adobo. It can be pork, Chicken or Beef. My favorite style of adobo is the sweet style and has a little bit of sauce in it.
Adobo in the Philippines has so many varieties to the point that we don't even know what is a standard adobo in our country. Adobo is also one of the most easiest dish to cook. From all of the dishes that I cooked, this is what my family likes the most.
INGREDIENTS:
1kg of Chicken (Quarter cut)
1cup of Soy sauce
1/2 cup of vinegar
1/2 cup of water
1/8 cup of oil
5pcs of boiled egg
3tbsp of whole peppercorn
1pc of onion
6 cloves of garlic
7 pcs of Bay leaf
1/2 cup of dark brown sugar
3 pcs of Tomato
1tsp of Chili Sauce
Procedures:
Cut the onions into medium sized cubes. For the garlic just smash it with the knife.
Put the chicken into a cooking pot along with the soy sauce, vinegar, garlic, onion, whole peppercorn and boil it for at least 8-11mins.
Fry the boiled chicken in a wonk until the skin is a little bit toasted. (Warning: oil may splatter, add a lid on the pan if there is available.)
Remove the chicken from the pan then toast the garlic and onion in the wonk. Then add the sauce, sugar, water, boiled egg and the chickens. Boiled it again for the last time until the sugar breakdowns and the sauce reduces a little bit.
Serve it with the chili sauce and tomatoes on the sides.
You may wonder why did I fry the chicken, this technique is for the flavor of the chicken to locked in to it. Remember chicken is easily cooked, be careful not to overcooked it
